Citrus Cake with Mascarpone Poppy Frosting


Since Easter is around the corner I have started altready to plan and think about my menu and all the goodies I plan to spoil my friends and family with. Today I have for you a very easy and fresh cake that will celebrate Spring and Easter all together.I am not much a person of words, I love more eating and tasting so without further introduction I invite you to take a peak at the recipe and maybe try’it yourself.

  1. For the sponge
  2. 600 g flour
  3. 360 g sugar
  4. 240 g butter
  5. 4 eggs
  6. 4 teaspoons vanilla extract
  7. 200 ml milk
  8. 3 teaspoons baking powder
  9. pinch of salt
  10. For the syrup
  11. 20 tablespoons water
  12. Juice and rind from 1 orange
  13. 4-5 pieces of star anis
  14. ½ tablespoon coriander seeds
  15. ½ tablespoon lemon rind
  16. 4 tablespoons lemon juice
  17. 6 tablespoons honey
  18. 2 tablespoons of orange blosson watter
  19. For the frosting
  20. 600 g mascarpone
  21. 400 ml whipping cream
  22. 2 tablespoons orange blosson watter
  23. 1 tablespoon lemon rind
  24. 2 tablespoons lemon juice
  25. 6 tablespoons powdered sugar
  26. 3 tablespoon poppyseeds
  1. Preheat the oven at 170 °C.^
  2. In a bowl start by mixing the sugar and the butter and whipe until the sugar is disolved, add the eggs one at a time , the vanilla extract and the milk. Separatly mix well the flour with a pinch of salt and the baking powder and then one step at a time incorporate’it in the wet mixture.
  3. Split the batter in 2 , transfer into grease pans and bake for 40 to 45 minutes.
  4. While the sponge bakes start preparing the syrup and the frosting.
  5. The syrup is the easiest thing to do , place all the ingredients in a pot over medium heat and simmer for about 15 minutes. Allow to cool, strain and put aside for later.
  6. For the frosting you need to start whiping the cream, then gradually add the orange blossom water, the lemon juice and rind and the poppy seeds.Using your electric whisk on a lower sepped add and incorporate the mascarpone . Set in the fridge to cool for at least 2 hours.
  7. After your sponge baked and cooled down , cut halfise and using a brush spread evenly the syrup and allow to soak for at least one hour.
  8. To assemble your cake split the mascarpone frosting in 2, use the first half of frosting inbetween the layers .The other half use to coat your cake.
  9. I strongly recommend coating your cake in 2 steps. Add one layer of frosting, set in the fridge for at least one hour and after add the second layer, this way you will have in the end a beautiful even white coating with little poppy dots.
  10. I decorated my cake with fresh tulips since is ment for a bit more festive setting ,you can do the same or just let your creativity get loose.
